Guided by the culinary expertise of Senior Executive Pastry Chef Nicolas Lambert and Chef Axel Godefroid, guests are invited to trace the enthralling origins of tea and coffee culture along the intricate sea-and-land spice routes that once united the East and West.
Indonesia
The expedition begins in Indonesia with the vibrant flavours of the Shrimp Peanut Sambal Sandwich, in which succulent prawns are embraced by peanut sauce, enlivened with zesty lemon juice, and infused with the aromatic essence of lemongrass and coriander.
Following this savoury introduction, the sweet masterpiece of Sumatra Gayo Coffee and Mangosteen is served as a delightful conclusion to the exploration.
This exquisite combination of Sumatra Gayo Coffee Mousse, chocolate biscuit, and tropical mangosteen coulis not only satisfies the palate but also pays homage to Indonesia's rich coffee heritage, which dates back to the 17th century and was introduced by the Dutch.

Shai Salon’s exploration of the vibrant tapestry of India's tea culture begins with the tantalizing Chicken Tikka Golgappa - a harmonious blend of succulent chicken tikka nestled within a crispy golgappa shell.
This savoury delight introduces an authentic Indian flavour symphony, providing a delightful contrast to the expedition. This savoury note is followed with the Karak Tea and Nagpur Orange - a luscious brioche Indian karak tea cream soaked in the warm embrace of Nagpur orange marmalade.
This special pastry boasts bold and comforting notes of karak tea, derived from the Hindi word for "strong" or "bold."
France
As we approach France, the air is filled with the fragrance of iconic lavender fields, setting the stage for Shai Salon's sensory journey. The Egg and Bacon Éclair - a harmonious blend of creamy egg, crispy veal bacon, and truffle, offers a refined taste of French gastronomy.
This savoury delight unfolds before delving into the French Lavender Tea and Figue de Solliès. This delicacy is made up of a lavender sablée paired with caramelized figs, drizzled in lavender honey, and crowned with an infused lavender tea mousse - a symphony of flavours inspired by the French lavender fields.

The journey culminates in Italy, where espresso reigns supreme. The enchanting Stracciatella with Tomato Consommé weaves vibrant flavours and exquisite tastes that transport taste buds to the heart of Italian indulgence.
Following this culinary journey, the Italian Coffee and Vanilla Affogato provides the sweetest of conclusions. Good location astounding but the staffs are rude and they make me wait so long for the service. They charge me more than what is on the website and did not refund me the manager is not helping with the issue
